Beets for the Beet-Hater

Now onto a much lighter, yet nutritious topic: beets.

But not your standard-fare red beet, which makes me cringe at the very thought. No, I’m talking about golden beets. I was just introduced to them by my friend, Dylan. I was an instant fan and that says a lot. My childhood hatred of veggies dissipated for everything except the beet. The red beet. I used to plug my nose in order to choke it back. I managed doing so with a little more dignity as I got older. I’ve wanted to like beets, knowing how nutritious they are, but I couldn’t persuade my taste buds.

Well, they were persuaded quickly by the golden beet. Its taste is milder and more varied, almost slightly spicy. Yum.

I’ve already bought another batch to roast. Roasting is where it’s at.
